JOHNNY CAKES




Ingredients:

4 Cups of all-purpose flour

4 Tsp. Baking powder

4 Tbsp. Shortening

6 Tbsp. Sugar

2 Tbsp. Salt

1 Can of Coconut milk (12 oz)


Directions:

Preheat your oven to 400° fahrenheit.

Warm the coconut milk on the stove on low heat for three minutes.

Mix the flour with the baking powder, sugar and salt.

Add the shortening and mix well.

Add the coconut milk to the mixture and mix until the dough is finally formed.

Knead the dough on a floured surface until the surface is smooth.

Divide the dough into 14 small equal balls.

Prepare a pan with butter so they don't stick.

Slightly flatten them from the top and poke a ew holes with a ork.

Bake or thirty minutes until they are golden brown.

You can eat your johnny cake with butter or simply as bread.
